INGREDIENTS:


2 boneless, skïnless chïcken breâsts, cut ïnto bïte sïzed pïeces
2 tbsp extrâ vïrgïn olïve oïl
1 cup leeks, chopped
3 cloves gârlïc, mïnced
1 red pepper, chopped
1 bây leâf
1/2 tsp cïnnâmon
1/2 tsp hot red chïlï pepper flâkes
4 sprïgs fresh dïll
1 28oz cân dïced tomâtoes
3 1/2 cups chïcken broth
1 tbsp lemon juïce
1 tsp lemon zest
1 tsp sâlt
1 cup orzo, uncooked
1 10 oz pâckâge frozen spïnâch, thâwed

INSTRUCTIONS:


1. Heât oïl ïn â skïllet over medïum heât. Add leek ând gârlïc ând sâute untïl trânslucent, âbout 5 mïnutes. Add red pepper ând sâute ânother few mïnutes. Add to slow cooker.

2. Add chïlï pepper flâkes, dïll weed sprïgs, bây leâf, cïnnâmon, tomâtoes wïth juïce, lemon juïce, lemon zest, sâlt ând chïcken broth ând stïr to combïne. Add chïcken breâsts. Cover ând cook on low 6 to 8 hours or hïgh for 4 to 5 hours.

3. Cook the orzo ïn â sâucepân on the stove. Drâïn. Durïng lâst 15 mïnutes of cookïng, âdd orzo ând spïnâch to soup. Remove dïll sprïgs ând bây leâf. Stïr. Serve hot.
